Tonight I saw an advertisement for fried chicken! Being closer to the south than I've ever been...I've been craving it recently. So, I decided to make my own, healthier version, of a crispy "not so fried" chicken. Here's what you'll need:
Boneless, skinless chicken breast
Italian Salad Dressing (Ranch works well too, but Italian is lower in calories)
Flavored Snack Crackers (I used a cracker called "Salsa Cream Cheese" but any cheese flavor cracker works!)
Wash the chicken breast and remove any excess fat. Coat the chicken in the salad dressing on both sides. Next, roll the chicken breast in the crushed cracker crumbs.
Once the chicken breasts are fully coated in their crunchy goodness, bake the chicken at 400 degrees F for about 15-20 minutes (or until the chicken is no longer pink in the center.
Once the chicken is done, serve with your favorite side! I chose broccoli in cheese sauce :) Dinner is served! Give your compliments to your chef!

Quick Lunch Idea: Turkey Quesadilla "Thingy"
Hey all! I hope everyone had a wonderful Thanksgiving and ate well! I know I did. However, it's now back to work and back to school full time for another three weeks before Christmas Break arrives. I had a ton of reading to do this morning and I'm headed to work at 3:30 this afternoon, so I was in need of a quick, but yummy lunch! Today was one of those days where I literally just pulled random things out of my fridge and threw them together and hoped it came out well. It did! Here's what you'll need:
Tortillas (whatever size and type you like)
Salsa (mild-hot...makes no difference, spice up your life!)
Shredded cheese (I like Mozzarella for quesadillas, but you can use whatever type you have)
Sliced sandwich meat from the deli (I used turkey, but again...whatever you have will work just fine)
Start by warming the tortillas on a flat pancake iron or skillet. Next, spread some of your shredded cheese over the ENTIRE tortilla (the cheese will help the two sides stick together once you fold it over). Then spread about a tablespoon of your salsa on one half of the tortilla. Place a slice of meat on the same side you put the salsa. Fold the tortilla in half to create a half moon shape. Flip the quesadilla a few times to cook all the way through and make sure your cheese is fully melted. Plate, and enjoy! Quick quick quick, and yummy yummy yummy!
