Tilapia Fish Tacos

HELLO my three loyal fans :) I apologize for not having posted anything since before Christmas.  It has been a busy month going back to school and work.  Here are some meals I've been meaning to post for you to try!

Tilapia is a favorite fish of mine.  It doesn't have a whole lot of flavor, so its a great white fish to add to otherwise flavorful dishes for a clean lean protein.  I like tacos, and who doesn't really?  These fish tacos are just to die for...I hope you like them!

First bake the tilapia fillets in the oven or fry them in a frying pan (try adding some Cajun seasoning to pep up the flavor that much more).  Then warm a couple soft corn tortillas and load on the fish!  Add your favorite toppings.  I suggest pico, fresh tomatoes and onions, avocado, shredded cheese, maybe even a little shredded cabbage?  I've had it all!  It's all phenomenal!  I like to serve these tacos with rice as a side because the fish itself isn't quite filling enough for a well balanced dinner.  Easy peazy!  Less than 10 minutes from freezer to table, and all for under 300 calories (not including the rice, and only if you get a carb smart, low calorie, corn tortilla...so read read read those nutrition labels!)
